Paleo Gummies

- 2 cups fresh organic fruit juice or purée (such as pomegranate, blueberry, or cherry)
- 2 tablespoons Manuka honey or organic maple syrup
- 2 tablespoons grass-fed gelatin

Instructions
- Place the fruit juice or purée and honey or maple syrup in a small saucepan. Heat over a medium heat until the mixture comes to a boil.
- Reduce the heat to low and add the gelatin. Whisk until the gelatin has completely dissolved.
- Pour the mixture into a silicone gummy mold or a shallow dish lined with parchment paper.
- Place the mold or dish in the fridge for at least one hour, or until the gummies have set.
- Once set, remove the gummies from the mold or cut them into small squares if using a dish.
- Store the gummies in an airtight container in the fridge for up to one week.
Note: You can use any type of fruit juice or purée for this recipe. You can also add a little bit of citric acid or lemon juice for a sour flavor.
